A Tasty Bruschetta

Hello Friends!

The past few weeks have been pure craziness with all that surrounds the holidays. With get togethers, parties and general frivolity, it was hard to find time to prepare something extravagant to bring to family gatherings. 

As a solution to this, I decided to whip up a quick and easy bruschetta. To say it was easy to make this appetizer is a huge understatement. 

My ingredients list is very straight forward: 
-Hot House tomatoes
-Red onion
-Fresh basil
-Mozzarella cheese
-Feta cheese
-Balsamic reduction


First make the balsamic reduction. I combined one cup of balsamic vinegar and 1/4 honey in a small saucepan, brought it to a boil over medium heat and let is simmer on medium-low for about fifteen minutes. Set the reduction aside and let it cool.  

Dice four large tomatoes, 1/4 cup red onion, 1tbsp of basil, and roughly chop about 1/2 cup of mozzarella. Combine all the ingredients, then drizzle with approximately 2tbsp of the balsamic reduction. Sprinkle some feta on top of the mixture just before serving. 



I served the bruschetta with a french loaf, but I ate the leftovers right from the dish. The flavours were amazing. 

Next time I think I'll try adding some green olives to the mixture. I'd also like to try heating the dish up and serving it warm. Yum!
