Work Cookie Exchange

Hello Friends! 

At work this week I participated in the annual cookie exchange. I take part in the baking extravaganza every year, and normally I like to go all out: cookie cutters, icing, sprinkles the whole package, but this year I toned it down as my week was a little hectic.

I decided to start off with a simple shortbread base and go from there. I used my friend Martha's recipe. I have a special affinity for chocolate and Skor bits, so I though I'd melt some chocolate chips and dip those delicious cookies into the Skor. My goodness they turned out nicely. 

Here are some pictures of the process: 
My standmixer comes in super handy when making large batches. This year I had to make 108 cookies.
The finished cookies. Shortbread upon shortbread upon shortbread.  I cooked them for about 15 minutes, or until the bottoms were golden brown. 
After they were completely cooled I melted about a cup and a half of chocolate chips in the microwave in thirty second increments. Dunked them into the chocolate then into the Skor bits. My Mister handled this part. Once he started going he didn't want to stop!
Here's the finished product. I placed them all on paper plates and then saran-wrapped them to stop the Skor bits from falling off. 
So far everyone has enjoyed them, and we've enjoyed all the cookies we've received! My waistline however...
