Cheater's Pasta Sauce

Hello Friends! 

I must admit, I'm a cheater, at least when it comes to making pasta sauce. 

I start with canned tomatoes as my base. These are definitely some of my faves:


I added some onion, roma tomatoes, jalapeños and sweet red peppers to the sauce. Any veg can be added, these were just the ones I had in my fridge. 

Through all those veggies into a saucepan, let them sauté for a few minutes.

Add in the canned tomatoes and throw on a bunch of basil. Stir the basil in and let it simmer for about fifteen minutes. 

I decided to throw in some of the leftover ricotta I had in the fridge, about one cup. Adding the ricotta really made the sauce richer and even more tasty than my normal recipe. 

Cook up some of your favourite pasta and you're good to go! I would love to make stuffed shells with this sauce and sprinkle with fresh parmesan. Perhaps for the next pasta night!
