Hello Friends!

I love to bake. Cooking, sometimes if I can follow a recipe. I try to bake something once a week, but lately its fallen by the wayside. Yesterday I had the itch. I also had three of the saddest, most freezer burnt looking bananas I've ever seen: 

These were frozen, not mouldy, I swear! 
So, I decided to make some banana chocolate chips muffins. Easy recipe, very straight forward. 

Ingredients:
3 very ripe bananas
1 egg
3/4 cup white sugar
1 tsp of both baking sugar and baking soda
1/2 tsp salt
1 1/2 cups all purpose flour
1/3 cup melted butter
About 1 cup of chocolate chips or more if you want it super chocolatey

Directions:
1. Combine all the dry ingredients.
2. Add melted butter and egg.
3. Place ingredients in a stand hand mixer and mix until blended (on the second or third setting).
4. Fold in chocolate chips.
5. Place a drop of muffin mix in prepared muffin tin.
6. Bake at 375° for 18-20 minutes depending on your oven. Mine took about 23 minutes.



These turned out so tasty, we ate nine of them yesterday! A word of caution, don't eat these right out of the oven, the chocolate is like molten hot lava!
